蛤蜊肉炒蛋,楊勇說,食材簡單易取得,超市都可買得到帶殼蛤蜊,讓蛤蜊吐沙,清洗乾淨煮沸,挑出蛤蜊肉,而韭菜容易藏泥土,也要洗乾淨,再把切段的韭菜、蛤蜊和雞蛋拌勻,放入鹽和雞精等調料攪拌,不需加水,因為韭菜含水分,炒後會出水,等油熱後下鍋打火翻炒後即可盛盤。
